Chef Jed came to Toronto at age 17 from Malaysia to study computer engineering, is a self taught chef. He inherited his talents from his mother, who taught cooking classes in Malaysia, and honed his skills after he moved to Canada and missed his mother's cooking. His grandfather was also renowned for his cooking abilities 
 
 After several years living in Calgary, where he taught computer engineering at a technical college, Lau moved to Woodstock in 2004 to open a popular restaurant * The Mosaic Restaurant, known for it's Indo-Thai inspired cuisine, became a favourite with local diners * Jed is now the chef at Ecole Secondaire Notre Dame/Sainte-Marguerite-Bourgeoys
